I can't say if the mobo/cpu combination you are going for will work OK as I don't have those components but, having switched from AMD to Intel, sometime ago (I'm now running the GA-Z77X-UP5 TH and i5-2500k) I can say that the difference between the two platforms is very noticeable. Even without O/C'ing the CPU the Intel system is faster than my old AMD rig (1090T CPU & GA-990FXA-UD5) in every way.
O/C'ing with Intel i5 & i7 chips is a little bit different to AMD but there are enough similarities for it not to be too daunting. There are some useful guides on this subject here and on other forums which can point you in the right direction. From my research it would seem that the Ivybridge processors do not overclock as well as the Sandybridge chips and I have managed to get to 5.0GHz with my 2500k when playing around with it in the early days.
The biggest issue I initially came across, believe it or not, was with all the different Intel drivers and trying to work out exactly what was needed. With AMD there is usually one driver package for motherboard, chipset & CPU, but with Intel there are usually a couple that are required.
