My MB shows I have version 1.0.  Is it possible to update the version to 1.1?

I don't think it is.  The only differnce on the 1.1 is that it has EUP compliance which is the new European regulation relating to energy saving.  Your 1.0 still has DES wich is the Gigabyte energy saver, but the EU have brought out a standard for this now.
