I have just purchased the GA-MA790XT-UD4P motherboard.  Is it possible to use EIDE DVD/CD drives with a SATA HDD?

In a word yes. The IDE channel can be enabled/disabled in bios and is a separate channel to the SATA ones so if you are using an IDE DVD/CD drive or HDD there should be no issues.
