I want to reuse one of these old boards and need to fit 8GB of RAM, the manual says I need single sided DDR2 which I'm finding very difficult to find. Do I really need single sided if I use all four memory slots?

I don't understand that one it says you can use DS memory. The only thing I would do is see if you can find 4gb sticks.
If you can't find 4gb sticks then all you can do is try the DS memory with 2gb sticks.
Plus the CPU your are using check out what the CPU will support on memory without OCing. Then go with that speed memory.
