I think that if the board will be able to use the 3.1 type C as Thunderbolt 3, than there will be no problem and the quality will not deteriorate because 40Gb/s should be enough for 3 1080p monitors.Another possibility will be to maybe use all the outputs at the same time: HDMI 2.0, DP 1.2 and USB 3.1 type C / Thunderbolt 3.

The USB-C port only allows one display as far as I can tell.
