I got 3 boards looking dud, identical boards.

Why the freakin hell does this shyte happen to a 1st time builder?

That just is against the odds that you would get three boards with the same issue..........First time builder is learning curve that you will learn from.

Try setting up the raid now with two working slots and see if you can do it and post back.
OK, that worked, will take a little while, I lost everything, reloading W7 now.

Each time I've tried this I've lost space on my drives, down from 120 to 105GB now.

OK, now I'm back at a problem I've seen several times before... after setting up RAID array, while installing windows, the system can't see the drivers.

Why can I install W7 on a single drive, but not on a Raid array?

Ok so after you create the raid in bios and reboot, while post is happening are you hitting Ctrl I to go into the raid configurator to set Raid up?

Read your manual.......

Yup, done that a few dozen times in the last 3 weeks.

Bios, set controller to RAID, save, reboot and hit Ctrl+I, setup RAID, save and reboot with W7 CD in drive, W7 starts to install on reboot, and after selecting the language option it goes to "Where's the freakin drivers you idiot" gimmie my drivers!!!

If I go thru the install W7 routine with just 1 hard drive in AHCI mode (no RAID) it cruises right on thru and installs completely, installs other programs (Office, Adobe etc).

I've updated the BIOS to F3, downloaded ALL motherboard drivers from the Gigabyte website.

It don't see the drivers on the motherbaord driver CD, maybe I need to download all the drivers to a flash drive, I dunno.

I think that if I have updated all the motherboard drivers already that the MB would still have the drivers installed even if I reinstall the operating system.

Ok so download the driver you need onto a USB and install when prompted to.
