X299 UD4: which Raid flavour do you prefer?

Since you can set up a Raid as EZ RAID, UEFI RAID and Legacy I was wondering which is best?
Is legacy mode needed when I may need to access data using an different/older mainboard?

I would recommend UEFI RAID. I would not plan to move the disk array to a different system or hardware. Your data should be protected with multiple back ups. This will give you the ability to migrate or restore data.
