Has it happened again after setting bios to optimized defaults?
If yes, I'd swap the PSU just to rule it out as this started happening after installing it?

All restarts have come to a sudden stop. I am not sure why. Perhaps it was the BIOS settings. It did seem to stop immediately after setting the BIOS to optimized settings.
After a couple of days I also set all the AHCI settings as Absic recommended and now everything seems fine again.

And now for a side note: yesterday, after realizing you guys helped me to fix my restart issue, I used an application called "SSD Tweaker 1.9.1"
Have any of you heard of it before?
It seems to have worked for me but I was a bit nervous because I never heard of it before.
Any ideas on this application?
